摘要
了解深圳市市售蜜饯食品质量状况,发现存在问题,对深圳市市售蜜饯食品进行随机抽样,按国家标准对相关指标进行检测并分析。试验结果表明,市售蜜饯合格率为95.65%,影响其合格率的主要因素是食品添加剂超标,其次是铅含量超标。为进一步提高蜜饯食品的合格率,这就要求蜜饯企业应严格遵守食品添加剂使用标准,并购买质量合格的原辅材料,监管部门应加强监督管理力度。
Objective:To investigate the quality status of preserved food in shenzhen,find out the existing problems and offer the basis to strengthen the management measures.METHODS:The samples of preserved fruits in shenzhen were randomly selected and analyzed according to the national standard.Results:The qualified rate of commercial preserved fruits was 95.65%.The main factor affecting the qualified rate was the excessive use of food additives,followed by lead content exceeding the standard.Conclusion:In order to improve the qualified rate of candied food,candied enterprises should strictly abide by the standards of food additives,and buy qualified raw and auxiliary materials,supervision departments should strengthen supervision and management.
