摘要
以仙人掌汁 ,糯米酿造醋为主要原料 ,研制出风味独特 ,营养保健的仙人掌复合醋饮料。采用正交试验方法对仙人掌护绿 ,汁液酶解和饮料配方等主要工艺进行了研究。
O.dillenii haw compound drink with unique flavor and healthcare nutrition took opuntia juice, fermented vineger as main ingredients. Main processing technology for green-protecting of opuntia and juice hydrolysis and formula of the drink were studied by orthogonal experiments.
