摘要
通过对红枣外形、风味比较和Vc含量的对照分析,结果表明红枣保鲜既要具备一定的温度、湿度,又要有合适的O2和CO2的浓度,在适当的条件下贮藏2个月,基本保持鲜枣的脆度和风味。
Comparing red dates appearance, flavour and its content of Vc, we conclude that keeping red dates fresh needs not only a certain temperature, humidity, but also proper consistence of O2 and CO2,under proper conditions, it can remain its crisp degree and flavour if it is stored up for two months.
