摘要
目的分析甘薯原料与薯仔之间关系,建立薯仔加工适宜性评价模型。方法采用相关性分析方法分析甘薯品质及甘薯与薯仔品质之间关系,采用回归分析建立甘薯与薯仔品质间关系模型。结果甘薯原料品质间存在显著相关性,其中水分、灰分、多酚氧化酶、粗蛋白、粗纤维、β-胡萝卜素和花青素等7个指标可以表征甘薯品质特性。经过薯仔品质拟合分析,得出分析材料中蜜薯、杠-19和雄薯8号为适宜加工的甘薯品种。通过回归分析,建立了适合加工的甘薯品质评价模型为Y=0.403*水分-1.465*灰分+0.357*粗蛋白-0.649*多酚氧化酶-0.163*粗纤维-0.746*β-胡萝卜素+0.516*花青素。结论本文建立的薯仔加工适宜性评价模型可以为甘薯的加工利用及适宜加工的甘薯品种选育提供依据。
Objective To analyze the relationship between Ipomoea batatas L.(sweet potato) and sweet potato products and establish the suitable evaluation model of sweet potato. Methods The relationship between sweet potato quality and sweet potato quality with sweet potato product quality was analyzed by correlation analysis. The relational model of sweet potato quality and sweet potato product quality was established by regression analysis. Results The relationship among sweet potato had a significant correlation. Water, ash, PPO, protein, fiber, β- carotene and anthocyanin could stand for the quality of the sweet potato. Mishu, Gong-19 and Xiongshu8 were suitable to process. By regression analysis, we established a suitable processing sweet potato quality evaluation model: Y=0.403*water-1.465*ash+0.357*crude product-0.649*PPO-0.163*crude fiber-0.746*β-carotene+0.516*anthocyanin. Conclusion This model of sweet potato and sweet potato product can provide evidence for sweet potato process and variety breeding.
