摘要
本文系统回顾了我国饮料酒近10年来的生产现状,产量大幅度提高,质量不断提升,国家、行业和企业层面对产品质量研究日益重视。与此同时,随着消费者整体认知能力的不断提升,质量事故频发。品质安全问题成为消费者、行业和企业日益关注的新问题。近几年来,各层面逐渐加大了质量安全研究的力度,但与国外研究相比差距巨大,且研究关注点并不均衡,特别是生产过程的控制与消减研究较少,不有利于企业质量安全的改进,建议加大这方面的研究力度,以期在不久的将来达到国际先进水平。
The production status of alcoholic beverages in China was systematically reviewed in nearly 10 years. The production increased significantly, quality improved constantly, and increasingly attention to product quality was paid by nation, industry and enterprise. At the same time, the quality accidents were frequently reported by media with the overall cognitive ability improvement of the consumers. The quality safety problems become the new hotspot for consumers, industries and enterprises. In recent years, the research intensity of the quality and safety gradually has increased. Compared with foreign research, the gap was huge, and the research focus was not balanced in China, especially in the production process control, reduction of toxic and hazardous compounds. This was not conducive to quality safety improvements of alcoholic beverages. We suggested that the researches of these aspects would be strengthened. We expected the quality and safety of alcoholic beverages would reach the international advanced level in the near future.
