摘要 γ-谷维素是米糠油中最重要的生物活性物质之一,能够用于食品、制药和化妆品等领域。γ-谷维素是天然的抗氧化剂,具有抗氧化,降血脂,抗炎、抗胃酸分泌,抗癌以及调节血糖等生理活性。该文主要对γ-谷维素的生物活性及其作用机制的研究进展进行综述,以期为γ-谷维素的进一步研究和开发利用提供参考。 γ-oryzanol is one of the most important bioactive substances in rice bran oil that can be used for food,pharmaceutical and cosmetic fields. A variety of biological activities of γ-oryzanol has been ascribed to including antioxidant,hypolipidemic,anticancer,anti-inflammation,inhibition of gastric acid secretion,regulation of blood glucose,and so on. The biological activities of γ-oryzanol and its mechanism were reviewed to provide a reference for future research and utilization of γ-oryzanol.
