摘要
以北方传统蛋皮月饼为例,分析其安全影响因素和潜在风险,确定原料验收、烘烤、凉冻和包装4个关键控制点,确立关键限值、监测步骤和纠偏措施,构建旨在保证其质量安全的HACCP体系,为企业的安全生产和管理提供借鉴。
Taking traditional northern egg skin moon cakes as an example to analyze its safety influencing factors and potential risks,determine 4 key control points for raw material acceptance,baking,cooling and packaging,and establish key limit values,monitoring steps,and corrective measures.The HACCP system that guarantees its quality and safety was established and the reference for the company’s safe production and management was provided.
