喷雾干燥技术在益生菌微胶囊制品中的应用研究进展 被引量:6

摘要 作为一种常用的益生菌微胶囊制备技术,喷雾干燥具有能源消耗低、制备效率高、可连续生产、易于产业化等优势。但喷雾干燥过程中较高的蒸发热和剪切力也给菌体存活带来了挑战,这对该技术在益生菌微胶囊制剂领域的应用提出了较高的技术要求。综述了近年来喷雾干燥技术应用于益生菌微胶囊制备的最新研究进展,探讨了菌株抗性、包埋材料以及干燥温度等处方工艺因素对益生菌保护效果的影响,旨在为其产业化过程优化提供参考。 Spray drying is one of the most commonly used microencapsulation method in the food industry,since it has the advantages of lower energy consumption,higher efficiency,continuous production,and flexibility for industrialization.However,the heat stress and shear force in spray drying process cause the inactivation of probiotics.So the higher technical requirements have been needed for spray drying technology using the microencapsulation of probiotics.Summarize the advances in application of spray drying technology in microencapsulation of probiotics in the recent years,and discuss the influences of these formulation and processing factors on the protective effect for probiotics,such as straintolerance,protective medium,drying temperature,and so on.Therefore,this review may provides some references for optimization of the future commercial production process.
