摘要
食品质量与安全问题直接关系到人们的身体健康及生活质量,近年来媒体、工商部门等不断曝光了各种食品质量问题,包括地沟油、毒大米、过期食品再利用等,引起了社会的广泛关注。国家对于食品质量与安全性的检验十分重视,该方面的技术也成为现代科技发展的重要方向,食品检测方法也在逐渐多样化,生物技术即为其中十分重要的构成部分。生物检测技术作为现代新兴的食品检测技术,其是利用生物中天然存在的辨识物质及反应能力,根据食品的成分、污染、基因、微生物等各个方面,研究出的有效的检测技术,其优势在于检测特异性高,精确度良好,且反应较为直观,成本低,对环境污染小,受到了社会的广泛关注,也得到了较大的进展。现代生物技术的快速发展,极大地促进了食品检测行业的发展,其能够应用于食品的各个方面,包括食品的制作、质量控制、质量评估等,具有较为良好的发展潜质,对其进行深入的研究与探讨是十分有必要的。
