摘要
食品卫生理化检验是一项需要严格、谨慎对待的工作。食品卫生理化检验包括质量保证、质量控制和质量评价这三部分,其中质量控制是食品卫生理化检验中至关重要的一个步骤。质量控制主要是由操作前的质量控制、实验过程中的质量控制、分析过程中的质量控制和检验分析后的质量控制四部分组成。笔者结合多年工作经验,阐释在质量控制中的步骤和应该注意的问题。
