益生菌是人体重要的微生态调节剂,有比较特殊的生理功能,具有非常重要的应用价值。本文综述了益生菌的种类、功能及其在食品中的应用与发展,为新型益生菌食品的开发提供一些依据。
Probiotics is an important micro ecological regulator of human body, it has a special physiological function, which has a very important application value. This article summarizes the types and functions of probiotics and its application in food, and provides some basis for the development of new type of probiotic food.
