摘要
本文主要采用均匀设计法研制巨大口蘑饼干,结果表明:制作巨大口蘑饼干的最佳配方为:低筋面粉100 g,巨大口蘑菇粉6 g,黄油25.6 g,蔗糖34 g,奶粉7 g,鸡蛋1个,泡打粉1g,食盐0.5 g。添加巨大口蘑菇粉后的饼干相比于一般产品,具有保健功能的菇多糖成分,还具有高蛋白,高纤维的特点。
Uniform design method was adopted to optimum the formula of Tricholoma giganteum biscuit in this paper.The results show that:the production of Tricholoma giganteum pastries of the optimal formula was,low gluten flour 100 g,Tricholoma giganteum powder 6 g,butter 25.56 g,sugar 34 g,milk 7 g,baking powder 1 g,salt 0.5 g and one egg.The Tricholoma giganteum powder biscuit were health care function foods,not only because they have the mushroom polysaccharide components,but also they have high protein,high fiber content compared to general products.
