摘要
过氧化值是衡量动植物油脂质量的一个重要指标,一般来说过氧化值检测数据如超过标准规定值,则该批产品是不宜食用的。现行国家检测标准一般有两个。一个是《GB/T 5538-2005iso3960动植物油脂过氧化值的测定》(代替GB/T 5538-1995);另一个是《GB/T 5009.37-2003食用植物油卫生标准的分析方法》;由于包括《1534-2003花生油》《1535-2003大豆油》《1536-2004菜籽油》等众多动植物检测标准中指定过氧化值检测方法均指向《GB/T 5538-2005》,所以笔者及众多检测机构、企业检验室在《GB/T 5538-2005》实施时均积极响应,积极参与执行。
