摘要
食品安全是现代社会不容忽视的一个问题,也是食品质量最重要、最基本的组成部分,食物过敏就属于食品安全问题。本文阐述食品过敏机制和过敏原特点,并利用实时荧光PCR法检测食品中芝麻过敏原成分,以供相关人员参考。
Food safety is a problem that can't be ignored in modern society,it also the most important and basic components of food quality,food allergies are relative to food safety issues. This paper makes a brief exposition of the food allergy mechanism and the characteristics of allergens,uses real-time fluorescence PCR method to detect the ingredients of sesame and provides reference for the related personnel.
