我国的"地沟油"问题由来已久,由于"地沟油"的特殊性,还没有标准方法鉴别判断。本文搜集查阅了大量相关最新研究进展,初步总结分析,旨在利用油脂特征性内源物的变化和外源物污染作为区别正常食用油的指标,达到快速、有效、准确鉴别"地沟油"的效果,为执法部门的严格执法提供依据,保障人民的身体健康和生命安全。

The problem of 'waste oil' in our country has a long history. Because of the particularity of 'waste oil',there is no standard method to distinguish and judge. This paper collect a large number of progress related to the latest research,preliminary analysis,aims to use oil characteristic changes of endogenous and exogenous contamination as the difference between the normal edible oil index,achieve rapid,effective and accurate identification of 'drainage oil' effect,as the law enforcement departments strictly enforce the law basis,to protect people's health and life safety.
