摘要
年糕是一种我国的传统米制食品,因为其水分含量较高,营养又极为丰富,容易导致微生物的滋生。因此,年糕在储存过程中的保鲜问题就显得尤为重要。本文主要论述食品领域中的各种杀菌保鲜技术,以及适合年糕保鲜并已经应用的方法。
Rice cake is a kind of traditional metric food of China, due to its higher water content and rich nutrition, vulnerable to microbial growth. So the rice cakes in the preservation problem is particularly important in the process of storage. This paper mainly discusses the various sterilization technology in the field of food, and is suitable for rice cake preservation method and has been applied.
