摘要 在食品行业,糖精钠作为甜味剂被广泛用在食品中,但过多摄入糖精钠对人体会造成一定程度的伤害,为保证食品安全,需要监控食品中的糖精钠是否超标。当前食品中的糖精钠含量检测应用最广泛的是高效液相色谱法,本文用GB 5009.28-2016标准中的高效液相色谱法(HPLC)测定某品牌汽水饮料中的糖精钠含量,对检测过程中的标准物质、标准溶液配制、标准曲线拟合、样品前处理、测量精密度和测量准确度等6个因素对结果带来的不确定度逐一进行分析,探讨对结果带来较大偏差的因素,也为食品安全方面的检测不确定度评定提高参考。 Saccharin sodium as sweetener is widely used in food industry, however, excessive intake of saccharin sodium on the human body will cause some damage.In order to ensure food safety, need to monitor whether saccharin sodium in food exceeded. Now, the most widely used method for the determination of saccharin sodium in food is high performance liquid chromatography(HPLC). This paper using GB 5009.28-2016 standard by high performance liquid chromatography(HPLC) determination of saccharin sodium in a certain brand of soft drinks, in the process of detection, evaluation the uncertainty of standard materials, the preparation of standard solution, standard curve fitting, sample preparation, measurement precision, measurement accuracy,analysis of these 6 factors one by one, to explore which factors case the result in large deviations, but also for the food safety detection aspects of the uncertainty evaluation to provide reference.
