摘要 随着科技的迅速发展,食品安全问题频发,对人体健康造成极大威胁。由于食品本身具有较强的复杂性、多样性,因此针对食品安全的分析技术也提出了较高要求。毛细管电泳本身的分离模式多,分离效率较高、分析速度较快、试剂用量较少,在食品安全分析领域得到广泛应用。本文分析毛细管电泳在食品非法添加剂中的应用,并阐述毛细管电泳在食品中有害残留检测中的应用。 With the rapid development of science and technology, food safety problems are frequent, which poses a great threat to human health. As the food itself has a strong complexity, diversity, so for food safety analysis technology also put forward higher requirements. Capillary electrophoresis itself, the separation mode, high separation efficiency, faster analysis, the amount of reagents less, in the field of food safety analysis has been widely used. This paper first analyzes the application of capillary electrophoresis in illegal food additives, and expounds the application of hazardous residue detection in edible food.
