摘要
食品营养作为高职旅游烹饪等专业中的一门核心课程,具有非常强的应用性及综合性,其教学内容主要包括讲解各类食品的营养价值,营养与人体健康之间的关系,人体对营养素的需求及合理膳食等。开展食品营养教学的目的除了让学生充分掌握营养知识以及合理膳食等基本技能外,更重要的是提高其自主学习、独立解决问题的能力。基于此,本文从"课证一体·双线融合"教学的相关概念出发,就此种教学理念在食品营养教学中的应用展开分析,以期为今后的教学工作提供参考。
Food nutrition, as a core course of tourism and cooking in higher vocational education, has a very strong application and comprehensiveness. Its teaching contents mainly include explaining the nutritional value of various foods, the relationship between nutrition and human health, The body's demand for nutrients and a reasonable diet. In addition to the purpose of food nutrition teaching students nutrition knowledge and reasonable diet and other basic skills have a full grasp, the more important is to promote their independent learning, independent problem solving ability. Based on the above, this paper starts with the relevant concepts of teaching and learning integration and bilinear fusion teaching, and analyzed the application of such teaching idea in food nutrition teaching so as to provide scientific reference for future teaching work.
