摘要
随着科学的发展和各项研究的深入,在国际范围内,生物活性肽的研发均受到了广泛关注和重视,成为生物高科技领域研究的一个热点课题。米糠肽是一种肽混合物,具有丰富的营养,安全且容易被人体吸收,还具有降血压、降血糖、抗氧化、免疫、抗癌、抗疲劳、降胆固醇等生理活性,展现出较为广阔的应用前景。基于此,本文阐述米糠肽的功能活性,对米糠蛋白的成分进行概括,并对其在食品行业的应用现状进行综述。
With the development of science and the depth of the research,the research and development of bioactive peptides has been paid more and more attention at the international level,which has become a hot topic in the field of biotechnology research. Rice bran peptide is a peptide mixture,not only rich in nutrition,safe,easy to be absorbed by the body,but also has lower blood pressure,see blood sugar,antioxidant,immune,anti-cancer,anti-fatigue,cholesterol and other physiological activity,showing more Broad application prospects. In this paper,the functional activity of rice bran peptide was described,and the composition of rice bran protein was summarized,and its application status in food industry was reviewed.
