发酵乳制品中双歧杆菌种类和数量快速测定的方法

摘要 双歧杆菌能够维持人体肠道内正常微生物菌群的平衡,有重要的营养功能,有利于延缓机体衰老,提高免疫力。当前,在乳品发酵生产中,已经广泛使用双歧杆菌。本次建立了快速测定发酵乳制品中双歧杆菌的方法,通过Real-Time PCR检测数量,PCR-DGGE检测种类,取得良好效果,检出限分别为104、105 CFU/g。 Bifidobacterium is able to maintain the balance of normal microbiome in human intestinal tract and has important nutritional function, which is beneficial to delay the aging of organism and improve immunity. Bifidobacterium is already widely used in dairy fermentation. This paper established a method for the rapid determination of bifidobacteria in fermented dairy products, and the detection of pcr-dgge by real-time PCR detection was achieved, and the detection limit was 104、105 CFU/g.
