摘要
从呼吸作用、内含物变化、乙烯释放、酶的作用等方面阐述了采后青椒的生理变化,对近几年国内外关于采后青椒的物理保鲜技术、化学保鲜技术、生物保鲜技术等进行了综述,指出各保鲜技术存在的问题并提出了今后的发展方向,以期为青椒保鲜提供理论参考。
The paper summarized the postharvest physiology of green peppers,including respiration,ethylene production,relevant enzymes and fresh-keeping storage methods including physical,chemical and biological methods,unsolved problems were pointed,and the feasible research directions were prospected,which may provide subservient references for storage of green pepper in the future.
