摘要
天然食用色素是从动物、植物、微生物或微生物代谢产物中提取出来的,以改变食品的颜色特性和营养特性的添加剂。其颜色鲜艳,具有良好的着色性能,且大多数具有营养保健功能,近几年对天然食用色素的研究越来越热。本文对天然食品色素的研究进展进行了综述,并对未来天然食品色素进行了展望。
Natural food pigment is extracted from animals, plants, microorganisms or microbial metabolites, used to change the color additives and nutritional characteristics of the food. It has bright colors and good color performance, and most of them have nutrition and health function. In recent years, more and more studies pay attention to natural food pigment . In this paper, the progress of natural food pigment are reviewed, and prospects for the future of natural food pigment are given.
