The culture and history of American ice cream were introduced, and the quantity of production, consumption and total output in 1999~2000 were reviewed. Natural, traditional, innovational are characteristics of American ice cream with highfat, highprotein, highsugar, lowexpansion, and rich additives. Ingredients to make top grade ice cream were also discussed.
