摘要
目的食源性致病菌是指在食品生产和流通过程中引入的病原菌,被人体摄入可引起食物中毒或其他慢性疾病,威胁公共卫生,造成医疗负担。本研究旨在了解2016-2017年潍坊市食源性致病菌污染状况,为相关食品安全标准、政策提供依据。方法 2016-2017年从各县市区采集11大类食品共600份,按照《山东省食源性致病菌监测工作手册》进行食源性致病菌检测,对检测结果进行分析。结果 2016年潍坊市部分市售食品中共检出食源性致病菌99株,总检出率为34.1%;2017年共检出食源性致病菌42株,总检出率为13.5%。2016和2017年食源性致病菌总检出率比较,差异有统计学意义,χ~2=35.33,P<0.001;2016和2017年潍坊市部分市售食品中,动物性水产品中副溶血性弧菌检出率均为最高,分别为40.0%和48.0%。2016年第三季度检出率最高,2017年在第四季度检出率最高,季度间食源性致病菌检出率差异有统计学意义,P<0.05;2016和2017年熟肉制品和生食动物性水产品合格率较低,分别为76.5%和68.8%。结论潍坊市部分市售食品中存在食源性致病菌污染风险,望引起相关部门重视,加强监督力度,确保食品安全。
OBJECTIVE Food-borne pathogens refer to the pathogens introduced in the process of food production and circulation,which can cause food poisoning or other chronic diseases by human intake,threaten public health and cause medical burden.The purpose of this study is to understand the contamination status of foodborne pathogens in Weifang City from 2016 to 2017,and to provide basis for relevant food safety standards and policies.METHODS From 2016 to2017,a total of 600 samples of 11 kinds of food were collected from various counties and municipalities.Food-borne pathogens were detected according to the Handbook of Food-borne Pathogens Monitoring in Shandong Province.RESULTS A total of 99 strains of food-borne pathogenic bacteria were detected in some food products sold in Weifang in 2016,with a total detection rate of 34.1%.In 2017,42 strains of food-borne pathogenic bacteria were detected,and the total detection rate was 13.5%.The total detection rates of food-borne pathogenic bacteria in some food products sold in Weifang were significantly different(χ~2=35.33,P<0.001)among different years from 2016 to 2017.And the detection rates were also significantly different among different quarters of a year.The highest detection rate of 2016 appeared in the third quarter,which appeared in the fourth quarter in 2017 diversely.The detection rate of Vibrio parahaemolyticus in animal aquatic products was the highest both in 2016 and 2017 in Weifang,which was 40.0%and 48.0%,respectively.The qualified rate of cooked meat and animal aquatic products was lower,which was 76.5%in 2016 and 68.8%in 2017,respectively.CONCLUSION Relevant departments should pay more attention to the food safety and strengthen supervision to the contamination of food-borne pathogenic bacteria in some food sold in Weifang.
