正交试验优化梨籽油精炼脱酸工艺研究

Optimization of Alkali Refining Deacidification Process of Pear Seed Oil by Orthogonal Test

摘要 以梨籽毛油为原料,利用正交试验对梨籽毛油的碱炼脱酸工艺进行研究.结果表明,影响碱炼脱酸的因素主次顺序依次为:碱液浓度>碱炼初温>超碱用量>碱炼时间;最佳脱酸工艺条件为:碱液浓度16%,碱炼初温45℃,超碱用量0.2%,碱炼30 min.在此条件下脱酸率为94.60%,精炼率为91.10%.经过碱炼脱酸后,梨籽油的酸值由8.15mgKOH/g降到1.03mgKOH/g,其他主要理化性质的变化较小,达到后续深加工和开发利用的品质要求. Using pear seed crude oil as raw material,alkali refining deacidification process of pear seed oil is studied by orthogonal test.The results show that the primary and secondary factors affecting the deacidification of alkali refining are alkali concentration,alkali refining temperature,super alkali dosage,and alkali refining time.The optimum deacidification process conditions are:alkali concentration 16%,alkali refining temperature 45℃,super alkali dosage 0.2%,and alkali refining time 30 min.Under such conditions,the acid removal rate is 94.60% and the refining rate is 91.10%.After alkali refining deacidification,the acid value of pear seed oil decreases from 8.15 mg KOH/g to 1.03 mg KOH/g,but other main physicochemical properties only have small changes,meeting the quality requirements for further processing and development.
