传统网箱养殖大黄鱼精深加工工艺研究 被引量:6

Study on intensive processing technique about tradition net cage culture of large yellow croaker

摘要 传统网箱养殖的大黄鱼,鱼体短而粗、体内脂肪含量高于野生大黄鱼,品质不佳。为此,专门研究开发了传统网箱养殖大黄鱼的加工工艺和加工设备,使用低温冷风烘道,在模拟冬季西北风的气候条件下,采用低温脱脂、脱水的加工工艺,对养殖大黄鱼进行精深加工,鱼品经试销反映良好。 The large yellow croaker cultured by traditional net cage, which body is short and thick, the content of fat is higher than the wild large yellow croaker, its meat is distasteful. The specially research and develop the further processing technology and equipment about traditional net culture cage of large yellow croaker, choose low temperature and cold wind dry-channel, adopt the processing technology of low temperature degreasing and dehydration to further processing the large yellow croaker cultured by traditional net cage on the condition of simulative weather of winter northwest wind. Base on test-market, the reflection is good.
