摘要
反式脂肪酸(Trans fatty acids.简称TFA)是不饱和脂肪酸的一种,是至少含一个反式构型双键的不饱和脂肪酸的总称。近年来,相关科学研究表明,大量食用含TFA的食物会加速动脉硬化,导致肥胖、心脑血管疾病、冠心痛、糖尿痛等疾病。TFA已成为近年采一些相关领域关注的焦点。本文讨论了反式脂肪酸的定义、特点、主要来源及对健康的主要危害,测定方法等。
Tram fatty acids(TFA) is a kind of unsaturated fatty acid,is a Trans configuration containing at least the floorboard of the double bonds of unsaturated fatty acid.In recent years,relevant scientific research shows that a large number of edible contains the food with TFA may accelerate atherosclerosis,obesity,cardiovascular disease,bolted pain,diabetes,pain and other diseases.TFA has become the focus of attention in recent years,adopt some related field.Trans fatty acids is discussed in this paper the definition,characteristics,main sources and main harm to the health and determination method, etc.
