摘要
玉米醇溶蛋白是一种天然生物高分子聚合物,它具有独特的溶解性、生物相容性、生物可降解性等特点,是目前作为食品和制药中绿色安全的生物活性成分载体的研究热点之一。本研究综述了玉米醇溶蛋白理化特性、分子结构以及自组装形成载体颗粒的机理;并总结了玉米醇溶蛋白微颗粒的制备工艺以及作为生物活性成分载体应用的研究现状,为生物活性成分载体玉米醇溶蛋白的开发利用提供了重要参考,同时也为玉米加工副产物的综合开发利用提供了新思路。
Zein is a sort of natural polymer with unique solubility, biocompatibility and biodegradable. Safety zein-based delivery systems have been particularly investigated for bioactive components in the fields of food and pharmacy. In this paper, the zein characteristics,structure and the mechanism of microsphere formed from zein were briefly reviewed. Furthermore, the preparation technologies which involved in bioactive components delivery systems were summarized. The research expects to provide a systematic science-summary for developing bioactive components delivery systems, and to give a strategy about comprehensive utilization on the by-products from processing of corn.
