摘要
介绍以黑芝麻为主要原料,经烘炒、磨粉后与面粉、糖、水调配、烘烤成的基料混合搅拌而成的功能性食品黑芝麻糊的加工工艺,并在生产加工中实施HACCP系统监控。
The Processing technology of black sesame laster by using black se sa me and wheat flour as raw materials through toasting, mashing and mixing is intr oduced in this paper. The optimised processing technology and the quality standa rds are determind. The quality of the black sesame laster was controlled by HACC P system.
