摘要
选用 14个不同来源及不同品质类别的冬小麦新品系 ,在不同生态试点种植 ,对其中 12个品种品质性状进行分析 ,初步研究了新疆不同生态气候条件与冬小麦品质的关系及其品质变化规律。结果表明 :随着生态环境的变化 ,面团流变学特性和面团拉伸参数差异最大 ,其次为湿面筋含量、沉淀值和降落数值的变化 ,小麦出粉率、粗蛋白含量及面粉吸水率几乎无差异 ;乌鲁木齐试点适合种植强筋力面包小麦 ,而奇台点较适合种植中筋力拉面型小麦 ;就一些重要的加工品质性状而论 ,内地育成品系的营养品质和面团流变学特性好于新疆育成品系 ,且内地育成品种品质类型优质多样 ,而新疆品系大部分属于中强筋或中筋力品质类型 ,缺乏品质性状突出的专用小麦品种 ,其中表现较好的是冬优 0 2、J35和新冬 2 2号。相关分析说明 :沉淀值与湿面筋含量呈显著负相关 ,与面团形成时间、稳定时间、评价值、最大抗拉强度存在显著正相关关系 ,与弱化度呈极显著负相关 ,与延伸性呈显著正相关 。
In this paper, twelve quality chracters of 14 different origin and type of winter wheat verieties, planted in two ecological enviroment,were analyzed.The results indicated that ecological properties and extensograph parameter were mostly affected by enviorment,the wet gluten,flour sendimention and fulling number were more affected,flour yeild,protein content and water absorption were no affected.High quality wheat variaties planted in Urumqi is better than that in Qitai;As far as some important quality charaeters (e.g. sendimention value, dough development time,stable time and evaluation value ) were concerned, ecological properties and potention quality of the other provinces improved varieties were superior to the improved wheat of Xinjiang province,their quality type is more and high,but quality type of Xinjiang improved varieties mostly belong to middle quality varieties.High quality varieties were scarecely shortened.However,there were some excellent varieties,such as Dongyou 02,J35 and Xindong 22,with the best performances in some important characters.Correlation analysis showed that there existed significantly positive relationship between sendimention value and dough development time ,stability,maximum resistence extensibility,evaluation value and extention value,and significantly negative relatedness to wet gluten and degree of softening .but no significant relationships between sendimention and the othedr characters?
