蔬菜中硝酸盐含量及其与钾含量的关系 被引量:75

摘要 分析研究了重庆市50余种蔬菜中硝酸盐含量及部分蔬菜中硝酸盐与钾含量的关系,结果表明:①约20种主要蔬菜中硝酸盐含量超过或远远超过世界卫生组织1973年对食品中硝酸盐的限量标准;②不同品种蔬菜硝酸盐含量不同;③蔬菜中的钾与硝酸盐含量呈极显著的负相关,其回归模型为指数曲线方程。 By studying the nitrate amount in more than fifty kinds of vegetables and the relation between nitrate and potassium amount in part of these vegetables, it was found that nitrate amount involved in twenty main kinds of vegetables is higher than the standard values of the permited amount in food which was formulated by U.N.W.H.O. in 1973, the nitrate amount in root, leaf and stem leaf vegetable is more than that in gourd, fruit, flower and kidney bean vegetable, and the regression model between nitrate and potassium amount in the vegetables was the index curves aquation and negative correlation coefficient reached very significant level.
