摘要
介绍了天然植物色素的成色机理和天然色素的分类,对天然植物色素的主要特点,特别是它的保健功能进行了介绍,并且将其与合成色素进行了比较,对目前从植物中提取色素的几种工艺方法及其各种植物在不同提取工艺方法下的最佳工艺参数进行了总结,并且对近年来我国最新研究的十余种天然色素的溶解性,在不同pH值条件下的显色情况,对光、热、氧化剂、还原剂、常见金属离子和食品添加剂的稳定性和适用范围进行了研究。
The principium and classification ,the primary characteristics about natural pigment, especially its health protection are introduced. The advantage and disadvantage between natural pigment and synthetic pigment are compared, too. Several extraction methods from plants and the best technical parameters at different extraction methods currently are reported.Their physicochemical properties, such as soluble property, stability to light, heat, oxidant, reducer and food additive are researched .The applications of ten kinds of new natural pigments in our country are depicted.
