摘要
本文计算了酒糟鱼中蛋白质的氨基酸分(AAS)、化学分(CS)、氨基酸指数(EAAI)和氨基酸比值系数分(SRC),并将其与原料鱼和酒糟比较,对其蛋白质质量进行评估,认为酒糟鱼是一蛋白质质量较高的食品。
Amino acid score, chemical score, essential amino acid index and score of ratio coefficient of amino acid of protein in the jiuzhao fish are calculated. Compared with common fish in nutnitional quality of protein, it is conclu ded that the jiuzhao, fish is a good food with higher quality protein.
