摘要
研究了从番茄中提取番茄红素的方法 ,通过正交试验 ,确定了最佳工艺条件 .结果表明 :使用 5 #溶剂两次浸提番茄糊 ,在番茄糊与溶剂比为 1:2 ,浸提时间 2 - 3h ,PH值 6 ,4 0℃下能充分提取色素 ;同时用超声法对番茄红素的提取进行了研究 。
Methods of lycopene extraction from tomato are studied and optimal conditions are determined through orthogonal experiments. The findings illustrate that lycopene can be completely extracted by using NO.5 solvent for the second level extraction from tomato pulp for a duration of 2~3 hours at a ratio of tomato mass to solvent volume of 0.50g/ml, a PH value of 6 and 40℃. Better result can be achieved when the supersound is applied in the experiment to extract lycopene from tomato pulp.
