摘要 总结了菌种、温度、pH值、发酵时间以及培养基组分等因素对乳酸菌胞外多糖产量的影响,探讨了生物合成途径中金属离子对产胞外多糖的酶活性的影响机理,以期推动乳酸菌胞外糖的研究和应用工作。 Produtction of exopolysaccharides(EPS)by lactic acid bacteria are excreted in the growth medium or remain attached to the bacterial cell wall,thus forming capsular EPS.Factors contributing to the production and biosynthesis of exopolysaccharides formed by lactic acid bacteria included strains,temperature,PH value,fementation time and media.The importance of metal ions in affecting the enzyme activites of EPS from LAB strains was also illustrated.
