摘要
对葡萄酒的酿造机制、风味物质、葡萄酒香气、分析技术及目前研究的主要内容作了简要概述,提出了今后葡萄酒的研究趋势。
Principles of wine brewing,compounds contributing to wine flavor,wine aroma ,analytical techniques and current trends in wine research were summarized in this paper.Research direction in future was advanced.
