摘要
在0℃条件下,采用0.06mm聚乙烯袋扎口包装(分扎口和加脱乙烯剂后扎口两种处理)贮藏大白菇,由于袋內具有较高浓度的二氧化碳(12.8%以上)和极低浓度的氧(0.2~1.0%),获得了良好的保鲜效果。同时扎口及加脱乙烯剂后扎口处理与折口处理的大白菇相比,多酚氧化酶活性受到了抑制,细胞膜渗透率、水浸液的O·D值明显减低,浸出液的pH值有所下降。但三种处理的蛋白酶活性差异不大,均随贮藏期的延长而显著降低。此外,扎口与加脱乙烯剂后扎口处理的大白菇在感官新鲜度上无明显差异。
The 0. 06mm polyethylene film bags, which were tied with or without adding ethylene absorbent, were employed to storePleurotus sp. at 0℃. The desirablestorage result was obtained, for there is higher concentration of CO_2 (>12. 8%) and lower concentration of O_2 (0. 2—1. 0%) in the bags. Compared the treatments of tied bags, and adding ethylene absorbent tied bags with the treatment of folded bags, the activity of polyphenol oxidize was inhibited, the permeability of cell membranes apd the optical density of dipped solution were decreased,and the value of PH was reduced. However, the proteinase activities have no significant difference among the there tree trea ments and were obviously reduced with the delaying storage, there were no significant difference in freshness hetween the treatments of tied bags and adding ethylene absothent tied bags.
