摘要 本实验首次利用响应面分析法 (RSM)对富含γ 氨基丁酸 (GABA)发芽糙米的发芽条件进行优化 ,得出富含GABA发芽糙米的最佳发芽条件为浸泡时间 12h ,浸泡温度 2 0℃ ,培养温度 32℃ ,培养时间 2 6h ,此时发芽糙米的γ 氨基丁酸含量达4 7.1mg/ 10 0g ,为发芽前的 2 . The influence of soaking temerature, incubating temperture and incubating time on the content of γ aminobutyric acid (GABA) in germinated brown rice was studied by means of Response Surface Methodology (RSM).The results showed that the optimum conditions for germination were as follows: soaking temperature 20 ℃, soaking time 12 h, incubating temperature 32 ℃, incubating time 26 h. The content of GABA in germinated brown rice under such conditions was 47.1 mg/100 g, 2.4 times as much as that before germination.
