山西和天津卤虫卵的生化组分分析 被引量:3

摘要 运用生化实验方法对来自山西运城和天津盐场的卤虫卵进行了组分的比较研究。结果表明,两地卤虫卵的粗脂含量分别为8 46%和8 83%,碘值分别为70 50和74 78,蛋白质含量分别为29 5%和32 3%,均富含18种氨基酸,其中包括8种必需氨基酸,Tm值分别为70 8℃和69 3℃,GC值分别为41 24%和37 58%。结论:两地卤虫卵的生化组分有一定的地区差异。 The component in egg of Arteam Salmas Sinnaeus from Shanxi Province and Tianjin saltern were analyzed by biochemical methods.The results indicated that content of crude fat were 8.46% and 8.83%,iodine value were 70.50 and 74.78,the content of protein were 29.5% and 32.3% respectively. There were eighteen kinds of amino acids in them,including eight kinds of essential amino acids. Tm value were 70.8℃ and 69.3℃,GC value were 41.24% and 37.58% respectively.The conclusion was made that there were some differences in biochemical components between the eggs of Arteam Salmas Sinnatus from Shanxi and Tianjin.
