摘要
对微生物植酸酶、植物植酸酶的特性进行了测定 ,并在体外条件下对其影响因素进行了研究。结果表明 ,微生物植酸酶和植物植酸酶的活性受 p H、温度、加工和贮藏因素的影响。微生物植酸酶、植物植酸酶分别在 p H5 .0、 p H5 .5具有最高活性 ,温度和 p H对植酸酶活性的影响存在明显互作。
The properties of phytase of microbial and plant origins and affecting factors to phytase activity were measured in vitro.The results showed:activity of microbial and plant of phytase ins affected by pH,temperature,processing and storage.Phytase of microbial and plant has optimal activity in pH5.0 and pH5.5 respectively,and temperature and pH has interaction on activity of phytase.
