摘要
本研究对强化牛肉干的主要营养成分进行了较全面的分析,并分别对儿童组和成年组两组人群分别进行了尿负荷实验.实验表明:强化牛肉干可以显著改善成年组维生素B_1、B_2及矿物质Ca、Zn、Fe的营养状况,而强化牛肉干只对改善儿童组矿物质Ca、Zn有明显作用,对维生素B_(1、2)及矿质后改善作用不明显。
This is a new kind of chewing beef jerk. It contains high quality protein and fortified calcuim,iron, Zinc,taurine and essential B vita—mins.The human experiments are divided into two groups, one is adults,an—other is children.The results of the experiments showed that this chewing beef jer can increase the contents of Ca, Zn,Fe, taurine and vitamin B_1,B_2 in urin in the adults group, but it can only increase the contents of Ca, Zn and taurine and it can not improve the nutrition al state of Fe, tamin B_1, B_2 remarkably in the children group. This kind of chewing beef jerk has high nutritional value and easily to digest and helpful in recovering fatigue as well as promoting physique and immunity. It is an ideal healthy delicatessen for both children and adults.
