环境因子对单核细胞增生李斯特氏菌生长的影响 被引量:2

摘要 目的研究不同的pH值和水活度对单核细胞增生李斯特氏菌的生长的影响。方法将单核细胞增生李斯特氏菌株(ListeriaMonoytogenes,LM)加入TSB-YE增菌液中,20℃培养,加入NaOH、乙酸、NaCl调节TSB-YE增菌液,使其pH值分别为9.0,5.6,水活度(αw)为0.950。结果单核细胞增生李斯特氏菌能迅速战胜碱性压力,但其对酸性压力和低αw压力敏感,在酸性或实验条件下,单核细胞增生李斯特氏菌生长过程中延滞时间和代时与标准条件相比明显延长。结论低pH值和低αw明显抑制单核细胞增生李斯特氏菌的生长。
