摘要
本文主要阐述了微胶囊的性质,芯材和壁材的选择方法,微胶囊化的方法,重点研究了微胶囊技术在食品工业中的应用及发展前景。
In this article,the property of micro-capsule,the choices of core-material and wall-material,the methods of micro-encapsulation are summarized.It is studied systematically on the application and future development of microencapsulation technology in food industry.
