本文介绍了纤维素酶的生产 (包括产酶菌种、发酵方法、发酵条件和酶的分离提纯等内容 )及其在食品工业中的应用概况 ,并对其发展前景作了展望。
the production of the cellulase, including the microorganism,the method and the condition of fermentation ,the separation and puring of cellulase etc. and its application in food industry are introduced in this paper. And author also made an outlook to its foreground.
