栀子黄色素包合物的研究 被引量:1

A SPECTROSCOPIC STUDY ON INCLUSION COMPLEX OF β-CYCLODEXTRIN WITH GARDENIA YELLOW

摘要 栀子黄色素是一种用途非常广泛并具有许多生理活性的食用天然色素 ,但由于性质不稳定 ,使其应用受到一定的限制 .制备了栀子黄色素与 β 环糊精的包合物 ,并通过紫外、红外、荧光、核磁共振谱验证了包合物的形成 ,确定了组成及包合物形成常数 .研究结果表明 :栀子黄色素与 β 环糊精形成了1∶ 1包合物 。 Gardenia yellow is a physiologically active and edible nature pigment. Its usage, however, is limited due to its instable property. An inclusion complex of Gardenia yellow pigment with β cyclodextrin was synthesized. UV, IR, fluorescence and NMR spectroscopy was used to confirm the formation of the inclusion complex and to determine the composition and the formation constant of the inclusion complex. The results show that β cyclodextrin and Gardenia yellow pigment form a 1∶1 inclusion complex. This experiment will provide reference frame for the application of Gardenia yellow pigment.
