摘要
目的 :了解重庆市食品污染现状。方法 :在严格的质量控制下 ,按照统一的方法 ,选择市内有代表性的 2 8个食品污染状况调查采样点 ,采取随机抽样的方法于夏、秋两季采集了 15类 19种 486件主要食品及副食品样品 ,进行了重金属、有机氯及有机磷农药、肠道致病菌 16个污染物指标的测定。结果 :共获得 2 592个有效监测数据 ,除 3件鲜肉和 1件皮蛋中的铅、 5件蔬菜中的镉超标以外 ,其余食品中的铅、砷、镉污染水平均大大低于国家标准和 CAC标准 ;六六六、 DDT、有机磷农药残留量检出率分别为 1.2 9%、 3 .2 3 %、 4.44% ,其含量均低于国家标准 ;3种食源性肠道致病菌检出率为 3 .94% ,其中检出率最高的是鲜肉为 15.0 0 %。结论 :重庆市鲜肉、熟肉制品、蔬菜是铅、镉、肠道致病菌污染的高危食品 。
Objective:To estimate the situation of the food contamination in Chongq ing Methods:Under the strict quality control 28 representative sa mpling palaces in the city were selected as food contamination survey position by the unanimou s method According to statistics random sampling method the 486 staple and no- s taple food samples of 19 varieties which belonged to 15 kinds food were co llected i n summer and autumn this year Sixteen food contamination indexes such as heavy me tals, organochlorinated, organophosphorus pesticides residues and enteropathog enic microorganisms and so on were analyzed for the sampling foodstuffs R esults: There was total 2592 significant data monitored from the survey T he contamination levels of lead,arsenic and cadmium in all foodst uffs detected were far below the associated criteria issued by ei ther the Chinese government or CAC except lead in one preserved eggs sample and cadmi um in five vegetable samples Additionally, detection rate of 666,DDT a nd organophosphorus pesticides residues in all samples was 1 29%,3 23%,4 44% re spectively, which lower than national hygienic standard Among 254 samples, 1 0 samples(3 94%) were contaminated with three kind enteropathogenic microorgani sms The high e st detection rate of three kind enteropathogenic microorganisms was founded in t he fresh meat, which was 15% Conclusion: T he fresh meat,meat products,vegetables had the high possibility of contaminati on by lead,arsenic,cadmium and enteropathogenic microorganisms So it is nece s sary to enhance the supervision and management of such kind food from now on
