摘要
本实验以葡萄为原料,经酒精发酵生成葡萄酒;并对葡萄酒进行适度控制的醋酸发酵,生成醋香型葡萄酒。进而对醋香型葡萄酒的加工工艺进行了初步的研究,寻找出了合理的生产醋香型葡萄酒的工艺条件及风味,并设计了醋香型葡萄酒的生产加工工艺。
The wine was made from grape by alcoholic fermentation.By means of controlling the acetic fermentation,the vinegar-flavor grape wine was produced from the grape wine.At the same time,through the preliminary research,the optimized parameters of the acetic fermentation and flavor were determined.Then,the processing technology of the vinegar-flavor grape wine was designed.
