摘要 酶反应技术在油脂研究中已经得到了一定的应用 ,如酶法脱胶、磷脂酶法改性、生物燃料的研究等等。近几年 ,酶技术在食品、粮油中的应用成为生物技术在这些行业中应用的重要标志之一。集中对酶技术在多不饱和脂肪酸等的纯化 ,包括多不饱和脂肪酸、共轭亚油酸和维生素E纯化的最新进展进行了阐述 ,并对酶技术在多不饱和脂肪酸纯化和分离的工艺及相关研究进行了综合和概括。 Enzyme technology has been used in oil and fats research for years, such as enzyme degumming for oils, enzyme modification for lecithins and biodiesel productions.Enzyme technology has been a symbol of biotechnological applications in food,cereals and oils research fields.Applications of enzyme technology in the purification of polyunsaturated fatty acids(PUFA), including preparations and purifications of polyunsaturated fatty acids,conjugated linoleic acid and vitamin E are presented in details. The related technics and researches are also presented .
