摘要
食物来源生物活性肽的研究受到了广泛的重视。选择适当的蛋白酶 ,水解麦谷蛋白 ,经分离纯化可以得到大量的外啡肽。文中综述了麦谷蛋白源外啡肽的分离与纯化、阿片活性评定及其生理功能。根据麦谷蛋白资源丰富、成本低 ,安全性好的特点 ,建议选择与胃蛋白酶和胰弹性蛋白酶酶学性质相近的微生物蛋白酶 。
